The unrivaled tasting and high-quality authentic Japanese Wagyu beef is finally available in Australia. To celebrate this occasion, Australian and the Japanese parties of the industry have gathered to hold a seminar for professionals of Japanese Wagyu beef. This seminar will focus on showcasing the beauty of Japanese Wagyu beef, raised in the climate and culture of Japan, by demonstrating how to cut and prepare the beef in order to emphasize its beautiful marbling, the olive-oil like fat, and its distinct aroma of authentic Japanese Wagyu beef. In addition, there will be a tasting of such at the end. At the venue, we have the support from 10 meat companies from Japan to assist in welcoming all our guest to this fantastic exhibition of beef. MIKO Foods Co., Ltd. Executive Director (Meat Specialist)

Noriaki Numamoto

MIKO Foods, of which Noriaki Numamoto is affiliated with, is a company that provides the production, processing and export services of Japanese Wagyu beef. Located in the Yamaguchi Prefecture, the region is known as the home of Prime Minister Abe. Since 1993, Noriaki Numamoto has been in the meat industry for 25 years, and has been focused on researching various methods to cutting Japanese Wagyu beef. In 2018, he provided a cutting show at a party hosted by Prime Minister Abe. Noriaki Numamoto is truly the most famous and specialist of Japanese Wagyu beef in our country. In addition to supervising cutting and preparation techniques of Japanese Wagyu to interested parties including beef suppliers at major international cities, Noriaki Numamoto has even showcased his talents to the Monaco royalty.

Tsuyoshi Hishinuma

Tsuyoshi Hishinuma entered the Ministry of Agriculture, Forestry, and Fisheries in 1965 and has been working in beef administration, utilizing his expertise in veterinary. From 1979, he was in Sidney for 3 years as a representative of the Livestock Industry Promotion Corporation, promoting beef purchasing operations with the support from Australian meat packers. In addition, not only has he been involved in improving the quality of Wagyu and training successors of Wagyu beef farms, he has experiences in organizing seminars such as the Wagyu-Juku. In 2014, he established the Japan Livestock Products Export Promotion Council as its first chairman, and has continued to handle operations in introducing authentic Japanese Wagyu to overseas customers.

What is "Wagyu"?

"Wagyu" is focused on cattle breed, developed and enhanced over extensive time domestically in Japan, with breeds specially being the "Japanese Black", the "Japanese Brown", the "Japanese Shorthorn", and the "Japanese Polled" as well as the cross breeds of these four. Wagyu also requires the cattle to be born and raised domestically in Japan, as well as relevant information readily disclosed and traceable under the Wagyu traceability system.
